Fatty-Acid Profiles, Triacylglycerol Compositions, and Crystalline Structures of Bambangan-Seed Fat Extracted Using Different Solvents

Currently, research on the bambangan-fruit seed has become interesting because of its potential application as a cocoa butter alternative. This work aimed to determine changes in quality extracted bambangan-seed fat (BSF) obtained using hexane, petroleum ether, and ethanol. The extraction solvents affected total content (TFC), physicochemical properties, fatty-acid profile, triacylglycerol composition, crystalline structure BSF. results showed that BSF high 1,3-distreoyl-2-oleoyl-glycerol (SOS). solvent-type significantly (p < 0.05) impacts stearic oleic acids extracts, resulting apparent high-melting symmetrical triacylglycerols, such SOS. Petroleum-ether-extracted acid 33.40%, followed by hexane- ethanol-extracted at 29.29% 27.84%, respectively. Moreover, spherulitic microstructure with needle-like crystals extracts also ranges from 30 70 µm diameter. Hexane-extracted illustrated less-dense, spherulitic, less-granular centre than those other solvents. suggested nonpolar hexane ether are better
